{"id":1001,"date":"2018-12-03T09:51:02","date_gmt":"2018-12-03T15:51:02","guid":{"rendered":"http:\/\/jessicatijerina.com\/?p=1001"},"modified":"2020-06-22T12:59:03","modified_gmt":"2020-06-22T17:59:03","slug":"chicken-tinga","status":"publish","type":"post","link":"https:\/\/jessicatijerina.com\/index.php\/2018\/12\/03\/chicken-tinga\/","title":{"rendered":"Chicken Tinga"},"content":{"rendered":"<h2><strong>Chicken Tinga<\/strong><\/h2>\n<p><strong>Servings:\u00a0<\/strong> 3 (10-12 Tacos)<\/p>\n<p><strong>Ingredients<\/strong><br \/>\n<span data-amount=\"1\" data-unit=\"tablespoon\">1 tablespoon olive oil<\/span><br \/>\n<span data-amount=\"1\" data-unit=\"cup\">1\u20442 onion, peeled and diced<\/span><br \/>\n<span data-amount=\"2\">3<\/span> cloves garlic, peeled and minced<br \/>\n<span data-amount=\"1\">1<\/span>\u20132 chipotle peppers in adobo sauce, diced (these are spicy hot peppers)<br \/>\n<em><strong>*1\u20442 teaspoon cumin, ground<\/strong><\/em><br \/>\n<em><strong>*1\u20442 teaspoon smoked paprika, ground<\/strong><\/em><br \/>\n<em><strong>*1 teaspoon Mexican Oregano<\/strong><\/em><\/p>\n<p><em><strong>*Substitute with 2 teaspoons Tijerina Carnitas Spice Blend!\u00a0\u00a0<\/strong><\/em><\/p>\n<p><span data-amount=\"0.75\" data-unit=\"cup\">1\u20442 cup fire roasted diced tomatoes<\/span><br \/>\n1 ripe tomato, (Roma preferred), seeds removed and diced<br \/>\n<span data-amount=\"0.25\" data-unit=\"cup\">1\/4 cup chicken broth<\/span><br \/>\n<span data-amount=\"0.5\" data-unit=\"teaspoon\">1 teaspoon Kosher salt<\/span><br \/>\n<span data-amount=\"3\" data-unit=\"cup\">3 cup<\/span>s shredded cooked chicken, to keep it simple, grocery store rotisseries works great!<\/p>\n<p><strong>Method<\/strong><\/p>\n<ol>\n<li>Heat a large skillet over medium heat. Add the oil and onion. Saut\u00e9 for 3-4 minutes or until tender, stirring occasionally.<\/li>\n<li>Add garlic and cook for 30-45 seconds more. Stir in the chipotles, <strong><em>*cumin, *smoked paprika and *oregano<\/em><\/strong> or <strong><em>Tijerina Carnita Spice Blend<\/em><\/strong> and cook for 1 minute.<\/li>\n<li>Add in the tomatoes, broth and salt. Bring to a simmer, and cook for 7-10 minutes.<\/li>\n<li>Remove from heat and let cool 5-10 minutes.<\/li>\n<li>Put the tomato mixture in a blender (let cool first) or use an immersion blend and blend until smooth. (Do not use hot liquids in a blender, may cause severe burns, let the mixture cool)<\/li>\n<li>Return the sauce to the pan over low heat and add the chicken. Cook for 5 -8 minutes or until heated through.<\/li>\n<li>Salt to taste.<\/li>\n<\/ol>\n<p>At this time you may add this to tortillas and top with whichever ingredients you like;\u00a0 avocado, crema, cilantro, lime, queso fresco or cotija cheese, radish, pickled onion, etc.<\/p>\n<p>Sometimes I like to add it to leftover rice for a quick power bowl lunch!
