If you buy beef bones, add them to a pot of water, and add vegetables with herbs is it a stock? Or, is it broth?

In this class we will list out the differences and similarities of stock and broth. Then, we’ll make stock and broth. You’ll also learn how to use stock and broth in cooking. Storage tips. And, the best part, drink them!

In this class, we will make a masa dough recipe and discuss the difference between a banana and a corn husk, which is the wrapping for these little gifts.

We will learn how to assemble them, wrap them and sauce them to perfection! You will learn how to make 2 fillings and 2 sauces as well as frijoles borrachos (drunken beans) salsa and guacamole. Don’t forget dessert! Because, YES we will make tamales de chocolate with berry filling and sauce.

Food on the go, from a stall, bicycle or small truck, let’s find out what Mexico has to offer.

MENU:

Elote en vaso – Corn in a Cup with cotija cheese, mayonnaise, lime/cilantro butter and chili powder.

Tacos de Canasta – Basket Tacos are corn or flour tortillas we will steam with onion, potato and spices.

Tacos al Pastor – Soft corn tortillas filled with stewed meat that has been marinating in spices all day.

All the while we will be sipping on a mouth-watering and refreshing Horchata, a Mexican rice drink.

Will end the class with one of Jessica’s favorite sweet street foods, Camotes or sweet potatoes, roasted and

drizzled with dulce de leche and a side of fresh berries.
